Baked Cod Fillets in Lemon Butter

Ingredients:
4 ½ Pound cod fillets (more if needed)
Fresh lemon juice
Butter
Butter crackers, rolled to fine crumbs
Directions:
1. Butter a baking tray size appropriate for number of portions.
2. Season fillets with salt & pepper sprinkle with lemon juice
3. Dip fillets in melted butter, then in cracker crumbs.
4. Place fillets on cooking tray, add a small amount of water for moisture
5. Bake at 450f for 10 minutes and then broil for 2 minutes until golden brown
Serve with hot lemon butter sauce
